I will use it as slave, via Cakewalk pro 9.

Welcome to the Clan
Make sure you use the XR in Performance Mode. That way it will receive all 16 MIDI channels at the same time - 1 for each part.
For an easy start with Cakewalk, use a template with 16 MIDI channels when you "Open" a new file - no need to match channels

What happens is that I am using other 2 rack mount synths.
So I have to assign different midi channels to different machines. And, of course, cancel channels accordingly.
My question is just where in the menu is the midi channel assignement?

It is right there at Performance part list screen.
In performance mode, hit twice to go to performance part list screen. Scroll to the right several time and you will see Midi receive channel as well as part on/off tab. Enable/disable as you want. and Hit Shift key to write the performance you edited.
