I'll almost always start the fantom with the volume turned down/off.
but
I have volume dropouts/falling levels....
it's always [part 2] or track #2 on the mixer screen,the levels just drop out to "0" or down to 25,i'll turn it back up and it'll do it agian unless i quick change to a different screen,it only happens when im on the mixer screen.
the time i have started the fantom with the volume not turned down,the sounds ping/sound like they have been hit with a filter or....
if it's a piano it'll sound like a synth is playing with it as well........
anybody have similar problems?
OS is updated to the latest available for the fantom-s i believe.

Does it happen with a certain performance or song? Do you have any extrenal gear connected via MIDI?

the mixer level dropouts happen no matter what performance or song i have loaded.
but only if/when i go to the mixer screen.
and no I have nothing attached to the fantom save for a pair of headphones.

i don't know if you saw my post, but i was having some weird problems with my fantom sounding right.
it ended up being the wrong power supply. it was the psb-1u that roland supplies.
also after looking at many different posts, i messed with the output gain and master level as well.

I had a related problem quite awhile back. Mine turned out to be a problem with an attached expression pedal. After disconnecting it, my problems went away. I used to be simply playing and all of a sudden the volume dropped way down to where I could hardly hear it. I had gone thru all the factory reset measures and reinstalled the original 2.0 software and still had the problem prior to removing the expression pedal(which was a Roland EV5) as specified. I have not updated to the latest version of the operating system since everything has been great so far and I don't want to temp fate. You can try doing a factory reset which will take you back to the original operating conditions and see if that solves your problem and if you have any pedals connected, unplug them and even try not having the headphones plugged in to see if the problem occurs. It seems the fantom is sensitive to feedback from attachments for some reason.

Fogg has some excellent suggestions. Definitely check them out. I had a few issues with an expression pedal, it wound up being a defective variable potentiometer.
Also, verify that you are at the latest OS. If not, do the update. Either way, definitely do a Factory Reset, even after updating the OS.
You also mentioned that you sometimes hear a synth playing along with the piano. This is indicative of a Midi Channel setting on your Parts for your Songs. Once a gain, a Factory Reset puts you back at point zero. After the reset, record a new Song/Performance and see if the issue persists.
Let us know what you get. . . . .
