As stated on the subject line, I followed the README steps when upgrading my G7 to v1.30. However, my v1.20 default project (the one that is on the G7 out-of-the-box) doesn't restore (i.e. the default project that comes with v1.30 remains, despite my project restore attempts).
Has anyone else encountered this?

You can go back to version 1.20 and restore the default project.
Don't use the "Project -> Backup" method, but copy it in a USB stick with the "Project -> Save as" command.
When you re-update to version 1.30, try to load this project.
If you manage to load it, you can write it back to internal memory with the "Project -> Save as" command again.

I attempted your suggested method without success.. I'm guessing that the default v1.20 project isn't somehow compatible with v1.30?
