If I got your problem right you should change a velocity curve on pads to exponential ("C"-shaped) and then to increase a sensitivity a bit.

I opened .INS file in the Notepad and added "I" bank manually. 20 minutes - and here you are.

I don't wanna say anything bad ab'ut Motif ES, but imho Fantom X rules! Usually Yamaha makes best live sounds, like nylon guitar or grand piano, but not this time!!!
