simply arm each track you want to record on and assign it to a different channel (which corresponds to whatever part the instrument in the fantom is on)...your settings depend on which machine you want to be the master--your fantom, or your computer...

Cakewalk Home Studio, SONAR, I'll go ahead and say Cubase and Reason...
Pro Tools is industry standard though, so that would be the logical investment if you are trying to avoid having to recreate your pieces...

to kinda speed up the process, you have 4 outs on the Fantom, and you can assign each part to its own output channel...that's about all I can say now though...I'm not versed enough in protools yet to give you a direct answer yet...

you can't set tempo or beat changes in pattern mode...only song mode.
The best solution (since I'm assuming that you're doing this live) is to keep the tempo window open, and just tap in the 2nd tempo and play the pattern again...
